Nothing says Christmas like eggnog and this vegan version uses dates, cashews and apricots, plus Oat milk and brandy to reinvent this classic festive tipple
- 25g Tree of Life pitted dates
- 25g Tree of Life cashew nuts
- 25g Tree of Life dried apricots
- ¼ tsp mixed spice
- 100ml brandy
- 1 vanilla pod, seeds only
- 1ltr Tree of Life Barista Oat Milk
- Ice, to serve
- Nutmeg, to serve
- Soak the dates, cashews, apricots and mixed spice in the brandy overnight.
- The next day, tip the mixture into a blender and add the seeds from the vanilla pod and the Oat milk. Blitz until smooth, then pour into eight tall glasses (use a sieve, if you like) with ice and grate some nutmeg on top.
