Roasted Courgette Pesto Pasta

Fresh, light and creamy roasted courgette pesto pasta is the ultimate summery pasta dish!

    1. Preheat oven to 180C/350F.
    2. Cut courgettes in half lengthways and then cut into semi-circles. Place on a baking sheet, toss in some olive oil, salt and pepper and place in the oven for around 15 minutes.
    3. Place pine nuts in a small dry frying pan on medium heat and toast for a few minutes until turning golden brown. Alternatively place in the oven for a 5 minutes.
    4. Cook pasta according to packet instructions.
    5. To make the pesto, combine basil, garlic, pine nuts, lemon juice and Parmesan in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified.
    6. Once the pasta is done, scoop out 1/4 cup of pasta water. Drain pasta and add the pesto, mix and add the pasta water. It should be nice and creamy and glossy.
    7. Serve and top with the roasted courgette and some extra parmesan!
