Easy Courgette Pesto Pasta

Fresh, light and creamy this roasted courgette pesto pasta dish is super-easy and purely plant-based. Enjoy warm or cold!

        1. Preheat oven to 180°C/160°C fan/gas mark 4
        2. Cut courgettes in half lengthways and then cut into semi-circles. Place on a baking sheet, toss in some olive oil, salt and pepper and place in the oven for around 15 minutes.
        3. Cook pasta in lightly salted boiling water for 10-11 minutes until al dente.
        4. Once the pasta is cooked, drain in a colander reserving 1/4 cup of the pasta water.
        5. Stir the pesto through the cooked pasta, adding a spoonful of the reserved pasta water to make a glossy sauce.
        6. Serve, topping with the roasted courgette and fresh basil leaves

Tip: you can make your own pesto by gently frying 50g of Tree of Life Pine Nuts for 5 mins. Then blitz in a food processor with 2 garlic cloves, 3 tbsp olive oil, a bunch of fresh basil leaves, juice of half a lemon and 2 tbsp Tree of Life Yeast Flakes
