Pistachio, Fruit & Seed Flapjack

This delicious healthy treat is one of our favourites as it’s not too sweet but satisfies those sugar cravings. The oats are also great for slowly releasing energy and keeping tummy-grumbles at bay between meals.

  1. Preheat oven to 170°C/fan 150°C/gas mark 3. Line a 20 cm baking tray with greaseproof paper.
  2. Place all the ingredients in a large bowl and mix well.
  3. Tip the mixture onto the prepared baking tray and flatten with a wooden spoon.
  4. Cover with greaseproof paper and place another baking tray on top, then gently push down to level and flatten the mixture.
  5. Remove the extra baking tray and paper and bake in the oven for 20 minutes.
  6. Remove from the oven and allow to cool completely. Slice them into 12 small bars and serve.
  7. Store in an airtight container for 10 days.
  8. Tip: you could use jumbo oats instead for a chunkier texture
