These delicious fruity muffins make a great, healthy breakfast or mid-morning snack! The tempting fruits are a great way to get a vitamin and fibre boost and keep energy levels up 'til lunchtime.
- 225g plain flour or gluten free alternative
- 2 tsp baking powder
- 2 large eggs
- 50g Tree of Life Organic Coconut Oil
- 175ml milk of your choice
- 100ml Tree of Life Organic Light Agave Syrup
- 85g Tree of Life Organic Cranberries
- 140g Tree of Life Organic Raisins
- 140g Tree of Life Organic Apricots, chopped
- 140g fresh blueberries
- 1 tsp grated orange zest
- 1 tsp ground cinnamon
- Preheat the oven to 200°C/fan 180°C/gas mark 6 and lightly grease a 12-hole muffin tin.
- Sift the flour and baking powder into a large bowl.
- In another bowl, lightly beat the eggs then stir in the melted coconut oil, milk and syrup.
- Pour egg mixture into the flour and add the remaining ingredients.
- Combine quickly without overworking (it’s fine if there are some lumps left – you want it quite gloopy).
- Spoon the mixture into the prepared muffin tin. Bake for 20-25 minutes until well risen and pale golden on top.
- Cool in the tin for a few minutes before turning out.
- When cool, store in an airtight tin for two days or freeze for up to 1 month.
