Fruit-burst Muffins

These delicious fruity muffins make a great, healthy breakfast or mid-morning snack! The tempting fruits are a great way to get a vitamin and fibre boost and keep energy levels up 'til lunchtime.

  1. Preheat the oven to 200°C/fan 180°C/gas mark 6 and lightly grease a 12-hole muffin tin.
  2. Sift the flour and baking powder into a large bowl.
  3. In another bowl, lightly beat the eggs then stir in the melted coconut oil, milk and syrup.
  4. Pour egg mixture into the flour and add the remaining ingredients.
  5. Combine quickly without overworking (it’s fine if there are some lumps left – you want it quite gloopy).
  6. Spoon the mixture into the prepared muffin tin. Bake for 20-25 minutes until well risen and pale golden on top.
  7. Cool in the tin for a few minutes before turning out.
  8. When cool, store in an airtight tin for two days or freeze for up to 1 month.
