Easter Carrot Cake Baked Oats – this quick and easy recipe is perfect for a lazy Easter weekend breakfast, brunch, or dessert.
- 40g Tree of Life Organic Oats
- 170 g plain dairy-free yoghurt
- 1 tsp vanilla extract
- ¾ tbsp granulated sweetener
- 100ml Oggs Aquafaba (or equivalent egg replacer of choice)
- 1 small carrot grated, approximately 30-40g
- ½ tsp mixed spice
- ½ tsp ground ginger
- ½ tsp cinnamon
- Add all of the ingredients into a mixing bowl and stir until combined.
- Pour into an oven-proof dish, place onto a baking tray and bake at 180°C for 35-40 minutes.
- Serve with a drizzle of plain dairy-free yoghurt.
