Easter Carrot Cake Baked Oats

Easter Carrot Cake Baked Oats – this quick and easy recipe is perfect for a lazy Easter weekend breakfast, brunch, or dessert.

      • 40g Tree of Life Organic Oats
      • 170 g plain dairy-free yoghurt
      • 1 tsp vanilla extract
      • ¾ tbsp granulated sweetener
      • 100ml Oggs Aquafaba (or equivalent egg replacer of choice)
      • 1 small carrot grated, approximately 30-40g
      • ½ tsp mixed spice
      • ½ tsp ground ginger
      • ½ tsp cinnamon
        1. Add all of the ingredients into a mixing bowl and stir until combined.
        2. Pour into an oven-proof dish, place onto a baking tray and bake at 180°C for 35-40 minutes.
        3. Serve with a drizzle of plain dairy-free yoghurt.
