Cacao Nib Chia Cookies

Cacao Nibs are nature's chocolate chips, only healthier than the processed, sugar-laden variety! Combined with omega-rich Chia Seeds these tasty nibs of raw cacao beans are packed with antioxidants making these cookies both nutritious and delicious!

  1. Preheat the oven to 170°C/fan 150°C/gas mark 3. Grease 2 baking trays
  2. Melt the coconut oil in a large saucepan over a low heat
  3. Meanwhile measure out all of the dry ingredients
  4. When the oil has melted, add the agave syrup and stir in well.
  5. Add boiling water then quickly add the bicarbonate of soda and whisk. It will foam and fizz up.
  6. Quickly add the dry ingredients and mix well together
  7. Roll handfuls of the mixture into balls and place on the prepared baking trays 2 inches apart
  8. Bake for 20–25 minutes until the balls are golden but still a little soft
  9. Remove cookies from the oven and leave to cool and firm up.
  10. Store in an airtight container for up to a week (if they last that long!)
